Ingredients
2 cups plain yogurt (preferably full-fat)
1 cup ripe mango pulp (fresh or canned)
1/2 cup powdered sugar (adjust to taste)
1/4 teaspoon ground cardamom
Saffron strands for garnish (optional)
Chopped nuts (such as almonds, pistachios) for garnish (optional)
Directions
- Strain the Yogurt: Place the plain yogurt in a muslin cloth or cheesecloth-lined sieve set over a bowl. Allow the yogurt to drain for 4-6 hours or overnight in the refrigerator to remove excess whey and achieve a thicker consistency.
- Prepare the Mango Pulp: If using fresh mangoes, peel and chop them into chunks. Blend the mango chunks in a blender or food processor until smooth to obtain mango pulp. If using canned mango pulp, ensure it is smooth and free of any lumps.
- Combine Ingredients: In a mixing bowl, combine the strained yogurt, mango pulp, powdered sugar, and ground cardamom. Mix well until all ingredients are thoroughly incorporated and the mixture is smooth.
- Chill: Cover the bowl with plastic wrap and refrigerate the Mango Shrikhand for at least 1-2 hours to allow the flavors to meld and the dessert to chill.
- Serve: Once chilled, transfer the Mango Shrikhand to individual serving bowls or glasses. Garnish with saffron strands and chopped nuts if desired, adding an extra touch of elegance and flavor.
- Enjoy: Serve Mango Shrikhand chilled as a refreshing dessert or enjoy it as a delightful accompaniment to Indian meals. Its creamy texture and tropical mango flavor make it a perfect indulgence for any occasion.
- Storage: Any leftover Mango Shrikhand can be stored in an airtight container in the refrigerator for up to 2-3 days.
